- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- Filling:
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 cup heavy cream
- 1/2 cup fresh lime juice
- Zest of 2 limes
- 3 large eggs
- Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lime juice
- Zest of 1 lime
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add heavy cream, lime juice, and lime zest, mixing well.
- Beat in eggs one at a time.
- Pour the filling over the cooled crust and bake for 50-60 minutes until set.
- Let the cheesecake cool completely.
- For the glaze, whisk powdered sugar and lime juice until smooth, then stir in lime zest.
- Pour the glaze over the cooled cheesecake and refrigerate for at least 4 hours before serving.
Notes
For a tangier flavor, increase the lime juice in the filling. Store in the refrigerator for up to 3 days.
