Description

A light and creamy cheesecake featuring a zesty lime mousse layer topped with a glossy lime glaze, perfect for a refreshing dessert.


Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • Filling:
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup heavy cream
  • 1/2 cup fresh lime juice
  • Zest of 2 limes
  • 3 large eggs
  • Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons fresh lime juice
  • Zest of 1 lime

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add heavy cream, lime juice, and lime zest, mixing well.
  6. Beat in eggs one at a time.
  7. Pour the filling over the cooled crust and bake for 50-60 minutes until set.
  8. Let the cheesecake cool completely.
  9. For the glaze, whisk powdered sugar and lime juice until smooth, then stir in lime zest.
  10. Pour the glaze over the cooled cheesecake and refrigerate for at least 4 hours before serving.

Notes

For a tangier flavor, increase the lime juice in the filling. Store in the refrigerator for up to 3 days.
