These Linzer cookies are a classic holiday treat, featuring buttery dough with a sweet jam filling.

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Powdered sugar for dusting
- Raspberry jam for filling
Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough to 1/8-inch thickness and cut out cookies with a Linzer cookie cutter.
- Place cookies on the prepared sheets and bake for 8-10 minutes, or until edges are golden.
- Cool completely, then spread jam on the bottom of half the cookies and sandwich with the other halves.
- Dust with powdered sugar before serving.
Notes
For best results, use high-quality jam and chill the dough properly to prevent spreading.
