Description

These Linzer cookies are a classic holiday treat, featuring buttery dough with a sweet jam filling.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting
  • Raspberry jam for filling

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together the flour, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the dough to 1/8-inch thickness and cut out cookies with a Linzer cookie cutter.
  8. Place cookies on the prepared sheets and bake for 8-10 minutes, or until edges are golden.
  9. Cool completely, then spread jam on the bottom of half the cookies and sandwich with the other halves.
  10. Dust with powdered sugar before serving.

Notes

For best results, use high-quality jam and chill the dough properly to prevent spreading.
