Description

A delicious and hearty dish featuring baked potatoes loaded with Mexican-inspired toppings like cheese, beans, and salsa.


Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Optional: Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then poke holes in them with a fork.
  3. Rub the potatoes with olive oil and season with salt and pepper.
  4. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  5. Once baked, slice the potatoes open and fluff the insides with a fork.
  6. Top each potato with shredded cheddar cheese, black beans, corn, diced tomatoes, and green onions.
  7. Return to the oven for 5-10 minutes until the cheese melts.
  8. Serve with a dollop of sour cream and garnish with fresh cilantro if desired.

Notes

For a spicier version, add jalapeños or hot sauce to the toppings.
