A flavorful gumbo made with fresh seafood, vegetables, and spices.
Ingredients

- 1 cup vegetable oil
- 1 cup all-purpose flour
- 2 cups chopped onion
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 4 cloves garlic, minced
- 1 pound andouille sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 pound crab meat
- 6 cups seafood stock
- 2 bay leaves
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Cook rice for serving
Instructions
- In a large pot, make a roux by heating oil and whisking in flour until dark brown.
- Add onions, celery, bell pepper, and garlic; cook until softened.
- Stir in sausage and cook for 5 minutes.
- Add stock, bay leaves, and seasonings; simmer for 1 hour.
- Add shrimp and crab; cook until seafood is done.
- Serve over rice.
Notes
For a spicier gumbo, add more Cajun seasoning.
