Description

A flavorful gumbo made with fresh seafood, vegetables, and spices.


Ingredients

Scale
  • 1 cup vegetable oil
  • 1 cup all-purpose flour
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 4 cloves garlic, minced
  • 1 pound andouille sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 pound crab meat
  • 6 cups seafood stock
  • 2 bay leaves
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Cook rice for serving

Instructions

  1. In a large pot, make a roux by heating oil and whisking in flour until dark brown.
  2. Add onions, celery, bell pepper, and garlic; cook until softened.
  3. Stir in sausage and cook for 5 minutes.
  4. Add stock, bay leaves, and seasonings; simmer for 1 hour.
  5. Add shrimp and crab; cook until seafood is done.
  6. Serve over rice.

Notes

For a spicier gumbo, add more Cajun seasoning.
