Description

These bars are a refreshing, low-sugar treat made with Greek yogurt, fresh lemon, and poppy seeds, perfect for a healthy snack or dessert.


Ingredients

  • 1 cup Greek yogurt
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 2 tablespoons poppy seeds
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and line a baking pan with parchment paper.
  2. In a large bowl, mix Greek yogurt, lemon zest, lemon juice, and poppy seeds.
  3. Add almond flour, honey, eggs, and vanilla extract; stir until well combined.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes.
