For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 3 tablespoons sugar
- 3 (8 ounces each) packages cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1/2 cup strawberry preserves
Instructions
1. Prepare the Crust:
- Preheat oven to 325ยฐF (165ยฐC). In a bowl, combine graham cracker crumbs, melted butter, and 3 tablespoons of sugar. Press mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla, sour cream, and flour until just combined. Pour over crust.
- Bake for 55-60 minutes or until the center is set. Cool in the oven with the door ajar. Spread strawberry preserves over the cooled cheesecake, slice, and serve.
