A decadent and creamy cheesecake swirled with spiced caramel apples on a buttery graham cracker crust.

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 2 tbsp unsalted butter
- 1/2 cup caramel sauce, plus more for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Combine graham cracker crumbs, 1/3 cup sugar, and 6 tbsp melted butter. Press firmly into the bottom of a 9-inch springform pan.
- In a skillet over medium heat, melt 2 tbsp butter. Add diced apples, brown sugar, and cinnamon. Cook for 5-7 minutes until tender. Stir in 1/2 cup caramel sauce and set aside to cool.
- Beat cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time, then mix in vanilla. Pour over crust. Spoon apple mixture over the cheesecake batter and swirl with a knife.
- Bake for 35-40 minutes or until the center is almost set. Cool completely on a wire rack, then refrigerate for at least 4 hours. Drizzle with additional caramel sauce before serving.
