Description

A decadent and creamy cheesecake swirled with spiced caramel apples on a buttery graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter
  • 1/2 cup caramel sauce, plus more for drizzling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Combine graham cracker crumbs, 1/3 cup sugar, and 6 tbsp melted butter. Press firmly into the bottom of a 9-inch springform pan.
  2. In a skillet over medium heat, melt 2 tbsp butter. Add diced apples, brown sugar, and cinnamon. Cook for 5-7 minutes until tender. Stir in 1/2 cup caramel sauce and set aside to cool.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time, then mix in vanilla. Pour over crust. Spoon apple mixture over the cheesecake batter and swirl with a knife.
  4. Bake for 35-40 minutes or until the center is almost set. Cool completely on a wire rack, then refrigerate for at least 4 hours. Drizzle with additional caramel sauce before serving.
