- 8 oz soft goat cheese
- 2 medium beets, roasted and pureed
- 1/2 cup pistachios, finely chopped
- Salt to taste
- Optional: Fresh herbs for garnish
Instructions
- Preheat oven to 400°F and roast beets until tender, about 45 minutes.
- Allow beets to cool, then puree them in a food processor.
- In a bowl, mix the pureed beets with the goat cheese until swirled.
- Shape the mixture into a log and roll it in chopped pistachios.
- Refrigerate for at least 1 hour before serving.
Notes
For a spicier version, add a pinch of cayenne pepper to the cheese mixture.
