Description

Ingredients

  • 8 oz soft goat cheese
  • 2 medium beets, roasted and pureed
  • 1/2 cup pistachios, finely chopped
  • Salt to taste
  • Optional: Fresh herbs for garnish

Instructions

  1. Preheat oven to 400°F and roast beets until tender, about 45 minutes.
  2. Allow beets to cool, then puree them in a food processor.
  3. In a bowl, mix the pureed beets with the goat cheese until swirled.
  4. Shape the mixture into a log and roll it in chopped pistachios.
  5. Refrigerate for at least 1 hour before serving.

Notes

For a spicier version, add a pinch of cayenne pepper to the cheese mixture.
