- 1 1/2 cups sugar
- 1/2 cup unsweetened cocoa powder
- 1/3 cup cornstarch
- 1/2 teaspoon salt
- 3 cups milk
- 4 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 pre-baked pie crust
Instructions
- In a saucepan, combine sugar, cocoa, cornstarch, and salt.
- Gradually stir in milk until smooth.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Boil for 1 minute; remove from heat.
- In a small bowl, beat egg yolks.
- Gradually stir about 1 cup of the hot mixture into the beaten egg yolks.
- Return the egg mixture to the saucepan and bring to a gentle boil.
- Cook and stir for 2 minutes.
- Remove from heat and stir in butter and vanilla.
- Pour into baked pie crust and chill for at least 2 hours before serving.
Notes
For a richer flavor, use dark cocoa powder. Chill the pie thoroughly for the best texture.
