- 2 pounds carrots, peeled and sliced into 1-inch pieces
- 2 medium apples, cored and cut into wedges
- 2 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, thyme, salt, and pepper.
- Add the sliced carrots and apple wedges to the bowl and toss until evenly coated.
- Spread the mixture evenly on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.
Notes
For a crispier result, broil for the last 2 minutes. Pairs well with poultry or as a vegetarian side.
