Description

A sweet and tangy roasted side dish featuring apples and carrots glazed with maple syrup and Dijon mustard.


Ingredients

  • 2 pounds carrots, peeled and sliced into 1-inch pieces
  • 2 medium apples, cored and cut into wedges
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, thyme, salt, and pepper.
  3. Add the sliced carrots and apple wedges to the bowl and toss until evenly coated.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.

Notes

For a crispier result, broil for the last 2 minutes. Pairs well with poultry or as a vegetarian side.
