- 2 pounds carrots, peeled and cut into 2-inch sticks
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, thyme, salt, and pepper.
- Add the carrot sticks to the bowl and toss until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until carrots are tender and caramelized, stirring halfway through.
