Description

Roasted carrots glazed with maple syrup and Dijon mustard for a sweet and tangy side dish.


Ingredients

  • 2 pounds carrots, peeled and cut into 2-inch sticks
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, thyme, salt, and pepper.
  3. Add the carrot sticks to the bowl and toss until evenly coated.
  4. Spread the carrots in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until carrots are tender and caramelized, stirring halfway through.
