Tender chicken breasts stuffed with creamy brie and fresh apple slices, then glazed with a sweet and tangy maple mustard sauce for a flavorful dinner.

- 4 boneless, skinless chicken breasts
- 4 ounces brie cheese, sliced
- 1 large apple, cored and thinly sliced
- 2 tablespoons pure maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly each chicken breast by slicing horizontally, but not all the way through, and open like a book.
- Stuff each chicken breast with slices of brie and apple.
- In a small bowl, whisk together maple syrup and Dijon mustard.
- Brush the chicken breasts with olive oil, season with salt and pepper, and place in a baking dish.
- Brush the maple mustard glaze over the stuffed chicken breasts.
- Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving, garnished with fresh thyme.
Notes
For a crispier glaze, broil the chicken for the last 2 minutes. Pair with roasted vegetables for a complete meal.
