For the Crust:
- 2 medium acorn squashes, halved and seeded
- 4 tablespoons maple syrup
- 4 slices bacon, cooked and crumbled
- 1/2 cup pecans, chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC).
- Brush each squash half with olive oil, then drizzle with maple syrup and season with salt and pepper.
- Place squash halves cut sides down on a baking sheet and roast for 25 minutes.
- Flip the squash halves over and fill each with crumbled bacon, pecans, and feta cheese.
- Return to the oven and roast for another 5-10 minutes, until tender and the toppings are toasted.
- Serve warm and enjoy!
