Description

This dish combines the sweetness of maple syrup with the savory flavors of bacon and feta, finished with a crunchy pecan topping.

For the Crust:

  • 2 medium acorn squashes, halved and seeded
  • 4 tablespoons maple syrup
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup pecans, chopped
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Brush each squash half with olive oil, then drizzle with maple syrup and season with salt and pepper.
  3. Place squash halves cut sides down on a baking sheet and roast for 25 minutes.
  4. Flip the squash halves over and fill each with crumbled bacon, pecans, and feta cheese.
  5. Return to the oven and roast for another 5-10 minutes, until tender and the toppings are toasted.
  6. Serve warm and enjoy!
