A simple yet elegant side dish where sweet potatoes are roasted until caramelized with pure maple syrup, crunchy walnuts, and fragrant fresh thyme.

For the Crust:

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup walnuts, roughly chopped
  • 1 tablespoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 20 minutes.
  4. Remove the baking sheet from the oven. Add the chopped walnuts and thyme leaves, tossing everything together. Return to the oven and roast for another 10-15 minutes, or until the sweet potatoes are tender and caramelized.
  5. Transfer to a serving dish and garnish with additional fresh thyme if desired. Serve warm.
