For the Crust:
- 4 large slices of crusty sourdough bread
- 4 large eggs
- 1/2 cup hummus
- 1 medium tomato, diced
- 1/2 cucumber, diced
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Toast the sourdough bread slices until golden and crisp. Spread a generous layer of hummus on each slice.
- In a small bowl, combine the diced tomato, cucumber, feta cheese, parsley, and oregano. Drizzle with olive oil, season with salt and pepper, and toss gently to combine.
- Heat a non-stick skillet over medium heat. Fry the eggs to your desired doneness, seasoning with salt and pepper. Place one fried egg on top of each prepared toast and spoon the tomato-cucumber salad over the egg. Serve immediately.
