Description
A fresh and healthy wrap filled with chickpeas, feta cheese, and assorted vegetables, served with a creamy yogurt sauce.
Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup feta cheese, crumbled
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 4 whole wheat wraps
- Yogurt Sauce Ingredients:
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, feta cheese, cucumber, cherry tomatoes, red onion, and parsley.
- In a separate bowl, mix Greek yogurt, lemon juice, garlic, salt, and pepper to make the yogurt sauce.
- Spread a generous amount of yogurt sauce on each wrap.
- Add the chickpea mixture to the center of each wrap.
- Fold the sides of the wrap and roll it up tightly.
- Serve immediately or chill for 30 minutes.
Notes
For a vegan version, substitute feta with a plant-based alternative and use dairy-free yogurt.
