Description

A fresh and healthy wrap filled with chickpeas, feta cheese, and assorted vegetables, served with a creamy yogurt sauce.


Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 4 whole wheat wraps
  • Yogurt Sauce Ingredients:
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, feta cheese, cucumber, cherry tomatoes, red onion, and parsley.
  2. In a separate bowl, mix Greek yogurt, lemon juice, garlic, salt, and pepper to make the yogurt sauce.
  3. Spread a generous amount of yogurt sauce on each wrap.
  4. Add the chickpea mixture to the center of each wrap.
  5. Fold the sides of the wrap and roll it up tightly.
  6. Serve immediately or chill for 30 minutes.

Notes

For a vegan version, substitute feta with a plant-based alternative and use dairy-free yogurt.
