- 2 lbs flank steak
- 1 cup quinoa
- 2 cups cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Marinate the steak: In a bowl, mix olive oil, lemon juice, salt, and pepper. Add the steak and marinate for 30 minutes.
- Cook the quinoa: Rinse 1 cup of quinoa and cook according to package instructions.
- Grill the steak: Heat a grill to medium-high. Grill the steak for 4-5 minutes per side for medium-rare. Let rest, then slice.
- Assemble the bowl: In a bowl, layer cooked quinoa, sliced steak, cherry tomatoes, cucumber, red onion, olives, and parsley.
- Serve: Drizzle with extra olive oil and lemon juice if desired.
