A delicious and fulfilling Mexican casserole layered with seasoned beef, tortillas, and melted cheese.

For the Crust:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 can (14 oz) diced tomatoes
- 1 cup salsa
- 1 onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
Instructions
1. Prepare the Crust:
- Preheat oven to 375ยฐF (190ยฐC).
- In a skillet, cook ground beef with onion, garlic, and taco seasoning until beef is browned. Add diced tomatoes, black beans, corn, and bell pepper. Simmer for 5 minutes.
- Layer tortillas on the bottom of a baking dish. Add a layer of the beef mixture, topped with some cheese and salsa. Repeat layers, ending with cheese on top.
- Bake in preheated oven for 30 minutes or until cheese is bubbly and golden.
- Let it cool for 5 minutes before serving.
