Description

A delicious and fulfilling Mexican casserole layered with seasoned beef, tortillas, and melted cheese.


Ingredients

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can (14 oz) diced tomatoes
  • 1 cup salsa
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a skillet, cook ground beef with onion, garlic, and taco seasoning until beef is browned. Add diced tomatoes, black beans, corn, and bell pepper. Simmer for 5 minutes.
  3. Layer tortillas on the bottom of a baking dish. Add a layer of the beef mixture, topped with some cheese and salsa. Repeat layers, ending with cheese on top.
  4. Bake in preheated oven for 30 minutes or until cheese is bubbly and golden.
  5. Let it cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
