Delicious mini cheesecakes made with Oreo cookies, perfect for desserts.

- 24 Oreo cookies, divided into 12 whole and 12 crushed
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
Instructions
- Preheat oven to 325ยฐF (163ยฐC) and line a muffin tin with paper liners.
- Place one whole Oreo cookie in the bottom of each liner.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, beating after each addition.
- Stir in sour cream and fold in crushed Oreos.
- Spoon batter over cookies in liners and bake for 20-25 minutes.
- Cool in tin, then refrigerate for at least 2 hours before serving.
