- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1/2 cup sour cream
- 1 cup chopped mint chocolate candies
- 1/2 teaspoon mint extract
- Green food coloring (optional)
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix chocolate cookie crumbs and melted butter; press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, beating well after each addition.
- Stir in sour cream, mint chocolate candies, mint extract, and food coloring if using.
- Pour the batter over the crust and bake for 55-60 minutes or until the center is set.
- Cool on a wire rack, then refrigerate for at least 4 hours before serving.
Notes
For a stronger mint flavor, increase the mint extract to 1 teaspoon. Store leftovers in the refrigerator for up to 5 days.
