Description

A creamy cheesecake with a refreshing mint flavor and chocolate crust, perfect for dessert lovers.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup sour cream
  • 1 cup chopped mint chocolate candies
  • 1/2 teaspoon mint extract
  • Green food coloring (optional)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix chocolate cookie crumbs and melted butter; press into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in sour cream, mint chocolate candies, mint extract, and food coloring if using.
  6. Pour the batter over the crust and bake for 55-60 minutes or until the center is set.
  7. Cool on a wire rack, then refrigerate for at least 4 hours before serving.

Notes

For a stronger mint flavor, increase the mint extract to 1 teaspoon. Store leftovers in the refrigerator for up to 5 days.
