Description

Cool mint, rich fudge, and creamy cheesecake in one epic slice!


Ingredients

Scale
  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup semisweet chocolate chips, melted
  • 1/2 teaspoon mint extract
  • Green food coloring
  • 1 cup fudge topping

Instructions

  1. Preheat oven to 325°F and grease a springform pan.
  2. Mix cookie crumbs, sugar, and butter; press into pan.
  3. Beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, beating after each.
  5. Divide batter; mix chocolate into one part and mint extract with food coloring into the other.
  6. Layer batters in pan and swirl for marble effect.
  7. Bake for 55-60 minutes until center is set.
  8. Cool and refrigerate for at least 4 hours.
  9. Top with fudge topping before serving.

Notes

For a stronger mint flavor, increase mint extract to 1 teaspoon.
