Ingredients

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 1 cup semisweet chocolate chips, melted
- 1/2 teaspoon mint extract
- Green food coloring
- 1 cup fudge topping
Instructions
- Preheat oven to 325°F and grease a springform pan.
- Mix cookie crumbs, sugar, and butter; press into pan.
- Beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, beating after each.
- Divide batter; mix chocolate into one part and mint extract with food coloring into the other.
- Layer batters in pan and swirl for marble effect.
- Bake for 55-60 minutes until center is set.
- Cool and refrigerate for at least 4 hours.
- Top with fudge topping before serving.
Notes
For a stronger mint flavor, increase mint extract to 1 teaspoon.
