These delicious mint mocha cupcakes combine the rich taste of chocolate with a refreshing hint of mint, perfect for any occasion.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon peppermint extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup brewed coffee
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter and sugar until fluffy, then add eggs one at a time, followed by milk, coffee, and peppermint extract.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Fill each cupcake liner 2/3 full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool completely on a wire rack before frosting.
