For the Crust:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1/2 cup unsalted butter
- 2 eggs
- 1/2 cup milk
- 1 teaspoon peppermint extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup brewed coffee
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake pan with liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat the butter and sugar until fluffy, then add eggs one at a time, followed by milk, coffee, and peppermint extract.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fill each cupcake liner 2/3 full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely on a wire rack before frosting.
