A decadent layered dessert combining rich chocolate cake, a cool mint cheesecake filling, and a smooth chocolate ganache.

For the Crust:
- 1 box dark chocolate cake mix, plus required ingredients (eggs, oil, water)
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 tsp peppermint extract
- 2–3 drops green food coloring (optional)
- 2 large eggs
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease and line two 9-inch round cake pans. Prepare the chocolate cake batter according to package directions. Divide the batter evenly between the two prepared pans.
- In a large bowl, beat the softened cream cheese and sugar until smooth. Mix in the peppermint extract and food coloring (if using). Beat in the eggs, one at a time, just until combined.
- Carefully pour the mint cheesecake mixture over the chocolate cake batter in one of the pans, spreading it evenly to the edges.
- Bake for 28-32 minutes, or until the center is set. Let the cakes cool completely in the pans on a wire rack.
- For the ganache, heat the heavy cream until just simmering. Pour over the chocolate chips in a bowl. Let sit for 2 minutes, then whisk until smooth. Let cool slightly to thicken.
- Place the plain chocolate cake layer on a serving plate. Top with the mint cheesecake layer. Pour the chocolate ganache over the top, allowing it to drip down the sides. Refrigerate for at least 2 hours before serving.
