Description

An incredibly rich and moist chocolate cake that uses mayonnaise for a tender crumb and deep flavor. You’ll never taste the mayo, just perfect chocolate cake.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 cup mayonnaise
  • 1 cup cold water
  • 2 teaspoons vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, and baking soda until well combined.
  3. Add the mayonnaise, cold water, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes, until the batter is smooth and well blended.
  4. Pour the batter into the prepared pan and spread it evenly.
  5. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Allow the cake to cool completely in the pan on a wire rack before frosting or serving.
