Description

A refreshing no-bake pie combining fresh blueberries with chia seeds for a healthy, easy dessert.


Ingredients

  • 1 1/2 cups fresh blueberries
  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 pre-made pie crust

Instructions

  1. In a large bowl, combine fresh blueberries, chia seeds, coconut milk, honey, and lemon juice.
  2. Stir the mixture well and let it sit for 10 minutes to thicken.
  3. Pour the mixture into the pre-made pie crust.
  4. Refrigerate for at least 2 hours or until set.
  5. Slice and serve chilled.

Notes

For a vegan version, use maple syrup instead of honey. Store leftovers in the fridge for up to 3 days.
