A refreshing no-bake pie combining fresh blueberries with chia seeds for a healthy, easy dessert.

- 1 1/2 cups fresh blueberries
- 1/4 cup chia seeds
- 1 cup coconut milk
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
- 1 pre-made pie crust
Instructions
- In a large bowl, combine fresh blueberries, chia seeds, coconut milk, honey, and lemon juice.
- Stir the mixture well and let it sit for 10 minutes to thicken.
- Pour the mixture into the pre-made pie crust.
- Refrigerate for at least 2 hours or until set.
- Slice and serve chilled.
Notes
For a vegan version, use maple syrup instead of honey. Store leftovers in the fridge for up to 3 days.
