Description

A refreshing and easy lemon tart that requires no baking.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan.
  3. In another bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until smooth.
  4. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  5. Gently fold the whipped cream into the lemon mixture.
  6. Pour the filling into the prepared crust and smooth the top.
  7. Refrigerate for at least 4 hours or until set.
  8. Slice and serve chilled.

Notes

For a tangier flavor, increase the lemon juice. Store leftovers in the refrigerator for up to 3 days.
