- 1 cup pumpkin puree
- 1/2 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 1/2 cups graham cracker crumbs
- Optional: 1 cup chocolate chips for coating
Instructions
- In a large bowl, beat the cream cheese until smooth.
- Add the pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract; mix until well combined.
- Refrigerate the mixture for 30 minutes to firm up.
- Scoop the mixture into balls using a tablespoon or cookie scoop.
- Roll each ball in graham cracker crumbs or chocolate chips if desired.
- Place the balls on a baking sheet lined with parchment paper and chill for at least 1 hour before serving.
