Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chicken pieces, season with salt and pepper, and cook until browned, about 5 minutes.
  3. Add diced onion and minced garlic, sauté until softened.
  4. Stir in rice, chicken broth, and Italian seasoning. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked.
  6. Stir in heavy cream and Parmesan cheese until creamy and well combined.
  7. Garnish with fresh parsley before serving.

Notes

For a lighter version, substitute heavy cream with milk or half-and-half.
