- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 onion, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chicken pieces, season with salt and pepper, and cook until browned, about 5 minutes.
- Add diced onion and minced garlic, sauté until softened.
- Stir in rice, chicken broth, and Italian seasoning. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked.
- Stir in heavy cream and Parmesan cheese until creamy and well combined.
- Garnish with fresh parsley before serving.
Notes
For a lighter version, substitute heavy cream with milk or half-and-half.
