- 1 pound ground turkey
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup spinach leaves
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Add ground turkey and cook until browned, breaking it up with a spoon.
- Stir in minced garlic and Italian seasoning, cooking for 1 minute.
- Add orzo pasta, chicken broth, and diced tomatoes with their juices.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes until orzo is tender.
- Stir in spinach leaves and cook until wilted.
- Season with salt and pepper, and serve topped with grated Parmesan cheese.
