A hearty and flavorful bowl combining roasted vegetables, chicken meatballs, and a tangy yogurt jalapeno dressing.

For the Crust:

  • 1 can chickpeas, drained and rinsed
  • 2 large sweet potatoes, diced
  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 2 jalapenos, seeded and minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400ยฐF (200ยฐC). Toss chickpeas and sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  2. In a bowl, combine ground chicken, Parmesan cheese, breadcrumbs, egg, salt, and pepper. Form into small meatballs. Place on a separate baking sheet and bake for 20 minutes or until cooked through.
  3. For the dressing, mix yogurt, jalapenos, lemon juice, salt, and pepper in a small bowl. Serve roasted chickpeas, sweet potatoes, and meatballs in bowls, drizzled with the dressing.

Notes

You can customize the seasonings to taste.
