A hearty and flavorful bowl combining roasted vegetables, chicken meatballs, and a tangy yogurt jalapeno dressing.

For the Crust:
- 1 can chickpeas, drained and rinsed
- 2 large sweet potatoes, diced
- 1 lb ground chicken
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup plain yogurt
- 2 jalapenos, seeded and minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat the oven to 400ยฐF (200ยฐC). Toss chickpeas and sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
- In a bowl, combine ground chicken, Parmesan cheese, breadcrumbs, egg, salt, and pepper. Form into small meatballs. Place on a separate baking sheet and bake for 20 minutes or until cooked through.
- For the dressing, mix yogurt, jalapenos, lemon juice, salt, and pepper in a small bowl. Serve roasted chickpeas, sweet potatoes, and meatballs in bowls, drizzled with the dressing.
