For the Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup smooth peanut butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat the oven to 325ยฐF (163ยฐC) and line a muffin tin with paper liners.
- Mix graham cracker crumbs with melted butter and press into the bottom of each liner to form a crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add in peanut butter, eggs, and vanilla extract, mixing until well combined. Spoon the mixture evenly over the crusts.
- Bake for 18-22 minutes or until the centers are set. Allow to cool completely.
- Once cooled, drizzle caramel sauce over each mini cheesecake. Chill in the refrigerator before serving.
