Description

Deliciously rich mini cheesecakes with a smooth peanut butter base and a luscious caramel topping.


Ingredients

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup smooth peanut butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325ยฐF (163ยฐC) and line a muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of each liner to form a crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add in peanut butter, eggs, and vanilla extract, mixing until well combined. Spoon the mixture evenly over the crusts.
  4. Bake for 18-22 minutes or until the centers are set. Allow to cool completely.
  5. Once cooled, drizzle caramel sauce over each mini cheesecake. Chill in the refrigerator before serving.
