For the Crust:
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan and line with parchment paper.
- In a medium bowl, prepare the peanut butter filling by mixing together the peanut butter and powdered sugar until smooth. Roll the mixture into about 16 small balls and set aside.
- In a large bowl, whisk together the melted butter and granulated sugar. Beat in the eggs and vanilla extract until combined.
- Sift in the flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
- Spread half of the brownie batter into the prepared pan. Place all the peanut butter balls evenly over the batter. Carefully spread the remaining brownie batter over the top, covering the peanut butter as much as possible.
- Bake for 30-35 minutes, or until the top is set and a toothpick inserted into the brownie (not the peanut butter center) comes out with moist crumbs. Allow to cool completely in the pan before slicing and serving.
