These no-bake pecan pie balls are a simple, delicious treat that mimics the flavors of pecan pie without any baking required.

- 1 cup chopped pecans
- 1 cup pitted dates
- 1/2 cup graham cracker crumbs
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate for coating
Instructions
- In a food processor, pulse the pecans until finely chopped.
- Add the dates, graham cracker crumbs, maple syrup, vanilla extract, and salt to the food processor.
- Process until the mixture is well combined and sticky.
- Roll the mixture into small balls, about 1 inch in diameter.
- If desired, dip the balls in melted chocolate and let them set on a baking sheet.
- Refrigerate for at least 30 minutes before serving.
Notes
These balls can be stored in an airtight container in the refrigerator for up to a week. For a nut-free version, substitute pecans with seeds.
