A decadent layer cake inspired by the flavors of classic pecan pie.

For the Crust:
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chopped pecans
- 1 cup dark corn syrup
Instructions
1. Prepare the Crust:
- Preheat the oven to 350ยฐF (175ยฐC). Grease and flour three 9-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.
- In another bowl, combine the flour, baking soda, and salt. Add the dry ingredients to the creamed mixture alternately with the buttermilk. Fold in the pecans.
- Divide the batter equally among the prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, prepare the pecan pie filling by combining the corn syrup, brown sugar, eggs, and vanilla in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens. Let cool slightly.
- Once the cakes are done and cooled, spread the pecan pie filling between the layers and over the top of the cake.
