- 1 1/2 cups graham cracker crumbs
- 1/2 cup finely chopped pecans
- 1/3 cup butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup canned pumpkin (not pumpkin pie mix)
- 1 cup packed brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla
- 4 eggs
- 1/2 cup chopped pecans for topping
- 1/4 cup caramel sauce for drizzling
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, 1/2 cup chopped pecans, and melted butter. Press mixture into the bottom of the prepared pan.
- In a large bowl, beat cream cheese until smooth. Add pumpkin, brown sugar, pumpkin pie spice, and vanilla; mix well.
- Add eggs one at a time, beating after each addition. Pour mixture over crust.
- Bake for 50-60 minutes or until center is set. Cool completely.
- Refrigerate for at least 4 hours. Top with remaining pecans and drizzle with caramel sauce before serving.
