Description

A moist and rich pound cake with a tropical twist from pineapple and the creaminess of cheese.

For the Crust:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can (8 oz) crushed pineapple, drained

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325ยฐF (165ยฐC) and butter and flour a bundt pan.
  2. In a large bowl, cream together butter, sugar, and cream cheese until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in the crushed pineapple. Pour batter into prepared pan.
  6. Bake for 70-80 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
