For the Crust:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 1 package (8 oz) cream cheese, softened
- 5 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 can (8 oz) crushed pineapple, drained
Instructions
1. Prepare the Crust:
- Preheat oven to 325ยฐF (165ยฐC) and butter and flour a bundt pan.
- In a large bowl, cream together butter, sugar, and cream cheese until light and fluffy.
- Add eggs, one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in the crushed pineapple. Pour batter into prepared pan.
- Bake for 70-80 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
