For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup crushed pineapple, drained
  • 1 tablespoon grated fresh ginger

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325ยฐF (165ยฐC). Combine graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing well after each addition.
  3. Fold in the crushed pineapple and grated ginger, then pour the mixture over the crust. Bake for 30 minutes, or until the center is set. Cool before serving.
