For the Crust:
- 1 1/2 cups crushed graham crackers
- 1/2 cup melted butter
- 3 tablespoons sugar
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple, drained
- 1 teaspoon ground ginger
Instructions
1. Prepare the Crust:
- Preheat the oven to 325ยฐF (163ยฐC).
- Mix the crushed graham crackers, melted butter, and 3 tablespoons of sugar together in a bowl. Press the mixture into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese and granulated sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, crushed pineapple, and ground ginger until well combined.
- Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
- Bake in the preheated oven for 30 minutes or until the center is set but still slightly jiggly.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.
