Description

Grilled shrimp kabobs with sweet pineapple and spicy habanero peppers for a flavorful tropical dish.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh pineapple chunks
  • 2 habanero peppers, seeded and minced
  • 1 red bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lime juice, honey, minced habanero peppers, salt, and pepper to make a marinade.
  2. Add the shrimp to the marinade and toss to coat. Let it marinate in the refrigerator for 15-20 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp, pineapple chunks, red bell pepper, and onion alternately onto skewers.
  5. Grill the kabobs for 4-5 minutes on each side, or until the shrimp are pink and opaque.
  6. Remove from the grill and let rest for a few minutes before serving.

Notes

Handle habanero peppers with gloves as they are very spicy. Adjust the amount of habanero based on your heat tolerance.
