Grilled shrimp kabobs with sweet pineapple and spicy habanero peppers for a flavorful tropical dish.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 2 cups fresh pineapple chunks
- 2 habanero peppers, seeded and minced
- 1 red bell pepper, cut into chunks
- 1 onion, cut into chunks
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lime juice, honey, minced habanero peppers, salt, and pepper to make a marinade.
- Add the shrimp to the marinade and toss to coat. Let it marinate in the refrigerator for 15-20 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp, pineapple chunks, red bell pepper, and onion alternately onto skewers.
- Grill the kabobs for 4-5 minutes on each side, or until the shrimp are pink and opaque.
- Remove from the grill and let rest for a few minutes before serving.
Notes
Handle habanero peppers with gloves as they are very spicy. Adjust the amount of habanero based on your heat tolerance.
