Description

A moist and flavorful banana bread with the addition of juicy pineapple and crunchy pecans.

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla, mashed bananas, and crushed pineapple.
  4. Gradually add the dry ingredients to the banana mixture, mixing just until combined. Fold in the chopped pecans.
  5. Pour batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
