For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla, mashed bananas, and crushed pineapple.
- Gradually add the dry ingredients to the banana mixture, mixing just until combined. Fold in the chopped pecans.
- Pour batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
