Description

A moist and tropical take on the classic pound cake, enriched with the sweetness of pineapple.


Ingredients

For the Crust:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC) and grease a loaf pan.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture, alternating with the crushed pineapple, beginning and ending with flour mixture. Mix until just combined.
  4. Pour the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
