A comforting casserole that combines the flavors of stuffed peppers with ground beef, rice, and cheese, inspired by The Pioneer Woman’s style.

- 1 pound ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 bell peppers, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 cup uncooked rice
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375ยฐF and grease a 9×13 inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned; drain fat.
- Add onion and garlic to the skillet and cook until softened.
- Stir in chopped bell peppers, diced tomatoes, rice, beef broth, Italian seasoning, salt, and pepper.
- Bring to a simmer and cook for 5 minutes, then transfer to the prepared baking dish.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle with shredded cheese, and bake for an additional 10 minutes until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
For a spicier version, add red pepper flakes. This casserole can be made ahead and refrigerated.
