- 8 ounces brie cheese, cut into 1-inch cubes
- 1/2 cup fresh raspberries
- 1/4 cup honey
- 1 tablespoon olive oil

Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix the chopped pistachios with salt and pepper.
- Dip each brie cube into olive oil, then roll in the pistachio mixture to coat evenly.
- Place the coated brie cubes on the prepared baking sheet and bake for 10-12 minutes, or until the cheese is soft and the crust is golden.
- While the brie is baking, combine raspberries and honey in a small saucepan over medium heat. Simmer for 5 minutes, mashing the raspberries until the mixture thickens into a glaze.
- Remove the brie bites from the oven and drizzle with the raspberry honey glaze before serving.
