These bite-sized appetizers feature creamy brie cheese coated in crunchy pistachios and drizzled with a sweet raspberry honey glaze, perfect for parties or gatherings.


Ingredients

  • 1 cup shelled pistachios, finely chopped
  • 8 ounces brie cheese, cut into 1-inch cubes
  • 1/2 cup fresh raspberries
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the chopped pistachios with salt and pepper.
  3. Dip each brie cube into olive oil, then roll in the pistachio mixture to coat evenly.
  4. Place the coated brie cubes on the prepared baking sheet and bake for 10-12 minutes, or until the cheese is soft and the crust is golden.
  5. While the brie is baking, combine raspberries and honey in a small saucepan over medium heat. Simmer for 5 minutes, mashing the raspberries until the mixture thickens into a glaze.
  6. Remove the brie bites from the oven and drizzle with the raspberry honey glaze before serving.
