Description

A refreshing salad featuring grilled shrimp, ripe avocado, mixed greens, cherry tomatoes, and a zesty lime dressing, perfect for a healthy meal.


Ingredients

  • 500g fresh shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 100g mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a bowl, marinate the shrimp with 1 tablespoon olive oil, juice of 1 lime, salt, and pepper for 10 minutes.
  2. Heat a grill pan over medium heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
  3. In a large salad bowl, combine the mixed greens, diced avocados, cherry tomatoes, and sliced red onion.
  4. Add the cooked shrimp to the bowl.
  5. Drizzle with the remaining olive oil and lime juice, then toss gently to combine.
  6. Season with additional salt and pepper if needed, and serve immediately.

Notes

For best results, use fresh ingredients and serve chilled. This salad is great for meal prep and can be stored in the fridge for up to 24 hours.
