Description

A moist and warmly spiced quick bread that is the essence of fall. Perfect for breakfast, a snack, or dessert.

For the Crust:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 cups canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/3 cup water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat the eggs with both sugars until well combined. Mix in the pumpkin puree, oil, and water.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
