- 1 cup pumpkin puree
- 8 ounces cream cheese, softened
- 1/2 cup graham cracker crumbs
- 1/4 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 cup white chocolate chips, melted
- 1/4 cup chopped pecans (optional)
Instructions
- In a large bowl, mix together pumpkin puree, cream cheese, graham cracker crumbs, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.
- Roll the mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
- Freeze for 30 minutes.
- Dip each ball into melted white chocolate and sprinkle with chopped pecans if desired.
- Refrigerate until set, about 1 hour.
