Description

Delicious no-bake truffles combining pumpkin puree with creamy cheesecake for a festive treat.


Ingredients

  • 1 cup pumpkin puree
  • 8 ounces cream cheese, softened
  • 1/2 cup graham cracker crumbs
  • 1/4 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate chips, melted
  • 1/4 cup chopped pecans (optional)

Instructions

  1. In a large bowl, mix together pumpkin puree, cream cheese, graham cracker crumbs, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.
  2. Roll the mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
  3. Freeze for 30 minutes.
  4. Dip each ball into melted white chocolate and sprinkle with chopped pecans if desired.
  5. Refrigerate until set, about 1 hour.
