Description

Ingredients

  • 6 large eggs
  • 1/4 cup pumpkin puree
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Hard boil the eggs and let them cool.
  2. Peel the eggs and cut them in half lengthwise.
  3. Remove the yolks and mash them in a bowl.
  4. Mix in pumpkin puree, mayonnaise, mustard, paprika, salt, and pepper.
  5. Spoon the mixture back into the egg whites.
  6. Chill and garnish before serving.
