- 1 can (15 oz) pumpkin puree
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3 large eggs
- 1 can (12 oz) evaporated milk
- 1 box yellow cake mix
- 1 cup chopped pecans
- 1/2 cup melted butter
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix pumpkin puree, sugar, cinnamon, nutmeg, salt, eggs, and evaporated milk until smooth.
- Pour the mixture into the prepared baking dish.
- Sprinkle the yellow cake mix evenly over the pumpkin mixture.
- Top with chopped pecans and drizzle melted butter over the entire surface.
- Bake for 50-60 minutes, or until the top is golden and the center is set.
- Allow to cool before serving.
Notes
For a crunchier topping, add more pecans. Store leftovers in the refrigerator for up to 3 days.
