For the Crust:
- 1 cup canned pumpkin
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat the oven to 350ยฐF (175ยฐC) and grease a 9-inch square baking dish.
- In a mixing bowl, combine pumpkin, vanilla extract, and granulated sugar.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Add to the pumpkin mixture and stir until combined.
- For the streusel, mix butter, brown sugar, and pecans. Sprinkle over the batter in the baking dish.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool before serving.
