A delicious coffee cake with a pumpkin base and a sweet streusel topping.

For the Crust:

  • 1 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350ยฐF (175ยฐC) and grease a 9-inch square baking dish.
  2. In a mixing bowl, combine pumpkin, vanilla extract, and granulated sugar.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Add to the pumpkin mixture and stir until combined.
  4. For the streusel, mix butter, brown sugar, and pecans. Sprinkle over the batter in the baking dish.
  5. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool before serving.
