- 1 pound chicken tenders
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 1 tablespoon lemon juice
Instructions
- 1. In a large bowl, combine chicken tenders with olive oil, oregano, basil, garlic powder, salt, and black pepper. Mix well and let marinate for 10 minutes.
- 2. Heat a skillet over medium-high heat. Add the marinated chicken tenders and cook for 4-5 minutes per side, or until golden and cooked through.
- 3. Add cherry tomatoes and Kalamata olives to the skillet during the last 2 minutes of cooking.
- 4. Remove from heat and drizzle with lemon juice. Serve immediately.
Notes
For best results, use fresh herbs if available. This dish pairs well with a side of couscous or salad.
